Ingredients

1 tsp baking soda

¾ cup coconut flour

¾ cup unsweetened cocoa powder

6 large eggs

¼ cup macadamia nut oil

¾ cup raw honey

1 (13.5 oz) can full-fat coconut milk, refrigerated overnight

1 ½ tbsp grade B maple syrup

1 tsp vanilla extract

Cooking oil spray (for muffin papers)

Directions

  1. Preheat your oven to 350°F. Line a 12-cup muffin pan with paper liners and lightly spray them with cooking oil to prevent sticking.

  2. In a medium bowl, sift together the coconut flour, cocoa powder, and baking soda. Set this dry mixture aside.

  3. In a large mixing bowl, blend together the 6 eggs, macadamia nut oil, and honey until well combined.

  4. Gently fold the dry mixture into the wet ingredients, stirring until all flour is incorporated and no dry pockets remain.

  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

  6. Bake for 18–20 minutes, until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Do not overbake.

  7. Allow the cupcakes to cool in the pan for 10 minutes, then turn them out onto a cooling rack or serve warm.

  8. For the frosting: open the refrigerated can of coconut milk and carefully spoon out the solid cream layer from the top, avoiding the thin liquid below. Place the cream in a clean mixing bowl.

  9. Add the grade B maple syrup and vanilla extract to the coconut cream.

  10. Using an electric hand mixer or stand mixer, whip on high speed for 4–5 minutes until the mixture reaches the consistency of whipped cream.

  11. Frost the cooled cupcakes with a generous dollop of coconut cream and serve immediately. Optionally, dust with cocoa powder. Note: the frosting is best enjoyed fresh and will not hold the firm consistency of conventional buttercream frosting.
