Ingredients

1 large egg

6 egg whites

1/4 cup chopped onion

1/2 cup shredded zucchini

1 tablespoon shredded low-fat cheddar cheese

Salt and ground black pepper to taste

Directions

  1. Heat a non-stick skillet over medium heat. Add the chopped onion and sauté for about 2 minutes until softened and fragrant.

  2. Add the shredded zucchini to the skillet and cook for another 2 minutes, stirring occasionally, until the zucchini has released some moisture and begins to soften.

  3. In a bowl, whisk together the large egg, egg whites, salt, and ground black pepper until well combined and uniform.

  4. Pour the egg mixture over the vegetables in the skillet, ensuring even distribution. Let it cook undisturbed for 3–4 minutes until the edges begin to set.

  5. Sprinkle the shredded cheddar cheese over the top of the frittata.

  6. Reduce the heat to medium-low and continue cooking for another 2–3 minutes until the center is just set and reaches an internal temperature of 160°F. The cheese should be melted and the surface lightly golden.

  7. Slide the frittata onto a plate and serve immediately while warm.
