2 pounds Shrimp, peeled and deveined (16/20 size)
3 tablespoons Olive oil
¼ cup Shallots, minced
2 tablespoons Garlic, sliced
⅓ cup Dry white wine
¾ teaspoons Turkish oregano
½ teaspoon Red pepper flakes
1½ cups Tomato sauce
to taste Kosher salt
to taste Freshly ground black pepper
1 tablespoon Fresh flat leaf parsley, minced
¼ cup Crumbled feta cheese
Directions
Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the minced shallots and sliced garlic. Cook, stirring frequently, for 2-3 minutes until softened and fragrant, being careful not to burn the garlic.
Pour in the dry white wine and scrape the bottom of the skillet with a wooden spoon to deglaze, releasing any flavorful browned bits. Let simmer for about 2 minutes to reduce slightly.
Add the tomato sauce, Turkish oregano, and red pepper flakes to the skillet. Stir well to combine and bring the mixture to a gentle simmer. Season with kosher salt and freshly ground black pepper to taste.
Add the shrimp to the tomato sauce and stir to coat evenly. Continue cooking for 4-6 minutes, stirring occasionally, until the shrimp turn pink and opaque and reach an internal temperature of 145°F.
Remove from heat and divide the shrimp and sauce among four serving bowls or plates. Top each portion with crumbled feta cheese and a generous sprinkle of fresh minced parsley. Serve immediately.
