Microwave Lemon Fudge

Ingredients
2 tablespoons butter, softened
1 10-ounce bag white chocolate chips
1 cup white chocolate chips
1 14-ounce can sweetened condensed milk
1 1/2 teaspoons lemon extract
Candies or sprinkles for decorating (optional)
Directions
Line an 8x8-inch baking dish with aluminum foil, allowing the edges to overhang so they can be used as handles for removal. Lightly spray the foil with non-stick cooking spray.
In a large microwave-safe measuring cup or bowl, combine the softened butter, both portions of white chocolate chips, and the sweetened condensed milk.
Microwave the mixture on high power for 1 to 2 minutes, stopping to stir every 30 seconds, until the chocolate chips are almost fully melted and the mixture is smooth. Do not overheat.
Stir in the lemon extract until well combined, mixing thoroughly to distribute the flavor throughout the fudge.
Pour the warm fudge mixture into the prepared baking dish, spreading it evenly into the corners with a spatula.
If desired, sprinkle candies or sprinkles over the top of the fudge while it is still warm.
Refrigerate the fudge for at least 2 hours, or preferably overnight, until it is completely set and firm.
Once set, use the foil handles to lift the fudge from the baking dish. Cut into 36 equal squares using a sharp knife, wiping the blade between cuts for clean edges.
