Ingredients
3 pounds Boneless pork stew meat, thawed and patted dry
6 tablespoons All-purpose flour
2 teaspoons Salt
1 teaspoon Ground black pepper
½ teaspoon Sweet paprika
2 tablespoons Vegetable oil
½ large White or yellow onion, small diced
2 cloves Garlic cloves, minced
2 cups Chicken or vegetable broth
¼ cup Dry white wine
1 tablespoon Tomato paste
8 ounces Sliced white mushrooms
½ cup Light sour cream or Greek yogurt
Directions
Place the thawed pork stew meat in a large mixing bowl. Pat the meat dry with paper towels to remove excess moisture.
In a small bowl, combine ¼ cup of flour with 1 teaspoon of salt, the black pepper, and sweet paprika. Sprinkle this flour mixture over the pork pieces and toss well until all meat is evenly coated.
Heat the vegetable oil in a large non-stick skillet over medium-high heat. Working in batches if necessary, add the floured pork and brown for 5–7 minutes, stirring occasionally, until a golden crust forms on the meat.
Transfer the browned pork to your slow cooker. Stir in the diced onion and minced garlic, distributing them evenly throughout the meat.
In a measuring cup, whisk together the remaining 2 tablespoons of flour with the broth until no lumps remain. Pour this mixture into the slow cooker and stir gently. Add the dry white wine, tomato paste, and remaining 1 teaspoon of salt, stirring to combine.
Add the sliced mushrooms to the slow cooker and stir. Cover and cook on high for 4 hours, or until the pork is very tender and easily breaks apart with a fork.
Gently stir in the light sour cream or Greek yogurt until fully incorporated. Taste and adjust salt and pepper as desired.
If desired, cover and cook for an additional 20 minutes on high to warm through and meld flavors further.
Serve over egg noodles, white rice, shoestring potatoes, or alongside crusty bread.
