Ingredients
8 slices bacon, cooked and crumbled
1 pound ground beef
1 onion, finely chopped
1/3 cup ketchup
2 tablespoons yellow mustard
4 cups frozen bite-size seasoned potato nuggets
1 cup shredded sharp cheddar cheese
Directions
Preheat your oven to 400°F. Coat a 9-inch square baking dish with cooking spray and set aside.
In a large skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks. Add the chopped onion and continue cooking until the onion softens and the beef is no longer pink, about 5–7 minutes. Drain off any excess fat from the skillet.
Stir the ketchup and yellow mustard into the cooked beef and onion mixture until well combined.
Transfer the beef mixture to the prepared baking dish, spreading it in an even layer across the bottom.
Distribute the frozen potato nuggets evenly over the beef layer.
Sprinkle the shredded cheddar cheese and crumbled bacon evenly over the top of the casserole.
Bake uncovered in the preheated oven for 30–35 minutes, until the casserole is heated through completely and the potato nuggets are golden brown on top. Serve hot.
Comments
All ingredients are standard stock at every Charlotte chain—bacon, ground beef, onion, ketchup, mustard, frozen potato nuggets, and cheddar cheese run about $12–15 total, or roughly $1.50–$2 per serving, which is honest for a weeknight casserole. The stated 50 minutes is plausible if you assume browning beef and bacon takes 15 minutes and assembly and baking take the remainder, though active hands-on time is closer to 20 minutes. This is a forgiving one-pan dish that reheats well and works for families, though it's not Southern-rooted enough to catch local seasonality and the frozen potato nuggets lack character compared to fresh potatoes.
