Ingredients

2 lb. pork roast

2 acorn squash, cut into bite-sized pieces

2 tablespoons butter

2 tablespoons brown sugar

1 tablespoon honey

2 tablespoons orange juice

1 teaspoon orange zest

1 teaspoon ground cinnamon

½ teaspoon ground ginger

Cooking oil for the roasting pan

Directions

  1. Preheat your oven to 350°F (175°C).

  2. Lightly brush cooking oil over the bottom and sides of an oven-safe roasting pan.

  3. Place the pork roast in the center of the prepared pan.

  4. Arrange the acorn squash pieces around the pork roast in the pan.

  5. In a small bowl, whisk together the butter, brown sugar, honey, orange juice, orange zest, cinnamon, and ground ginger until well combined.

  6. Drizzle the spice mixture evenly over the pork roast and squash pieces.

  7. Place the roasting pan in the preheated oven and roast for approximately 1 hour, or until the internal temperature of the pork reaches 145°F (63°C) when measured with a meat thermometer at the thickest part. The squash should be fork-tender and caramelized.

  8. Remove from the oven and let rest for 5 minutes before serving. Spoon any pan drippings over the pork and squash.
