Hoisin Beef with Crispy Noodle Cake

Ingredients
300 g Rump or sirloin steak
3 tbsp Hoisin sauce
Fresh mint leaves
6 Radishes, thinly sliced
Black pepper
Cooked egg noodles
Vegetable oil
Directions
Rub the beef steak generously with hoisin sauce and season with black pepper on both sides. Place in a shallow dish and set aside to allow the flavors to develop while you prepare the noodle cake.
In a medium bowl, combine the cooked egg noodles and season with black pepper. Heat half of the oil in a medium non-stick frying pan over medium heat. Pour the noodle mixture into the pan and press gently to form an even cake. Cook for 3–4 minutes until the bottom is golden and crispy.
To flip the noodle cake, place a flat plate over the top of the pan, invert carefully to slide the cake onto the plate, then slide it back into the pan cooked-side up. Cook for another 3–4 minutes until the second side is golden.
Transfer the noodle cake to a warm plate and keep it warm in a low oven.
Wipe out the pan briefly and heat the remaining oil over medium-high heat. Once hot, place the hoisin-coated steak in the pan and sear for 2–3 minutes per side for medium-rare (internal temperature 160°F), or longer if you prefer it more well done.
Let the steak rest for a couple of minutes, then slice thinly. Arrange the steak slices over the warm noodle cake and scatter generously with fresh mint leaves and sliced radishes. Serve immediately.
