Ingredients

2 lb Yukon Gold potatoes, peeled and halved

Salt

2 tbsp Unsalted butter

½ cup Heavy cream

Freshly ground black pepper

½ lb Corned beef, sliced and coarsely chopped

¼ cup Vegetable oil

½ medium Medium onion, cut into 1/4-inch dice

6 large Eggs, fried, for serving

Hot sauce, for serving

Ketchup, for serving

Directions

  1. Place the halved potatoes in a large pot and cover with cold salted water. Bring to a boil over high heat and cook until the potatoes are very tender, about 15 minutes. Drain well.

  2. Return the drained potatoes to the pot. Add the butter and heavy cream, then mash until smooth and creamy. Season with salt and freshly ground black pepper to taste. Set aside and let cool slightly.

  3. Fold the chopped corned beef into the mashed potatoes until just combined. Be careful not to overmix.

  4. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the diced onion and sauté until golden and softened, about 3 to 4 minutes.

  5. Add the corned beef and potato mixture to the skillet, pressing it down gently with a spatula. Cook without stirring for 6 to 8 minutes until the bottom forms a golden-brown crust.

  6. Break the hash into large chunks with the spatula, then continue cooking and stirring occasionally for another 4 to 5 minutes until additional brown, crispy bits form throughout.

  7. Divide the hash among serving plates. Top each portion with a fried egg and serve hot with hot sauce and ketchup on the side.

This is a straightforward weeknight dish with ingredients you can find at any Charlotte supermarket—potatoes, corned beef, eggs, onions, butter, and cream are staples at Harris Teeter, Food Lion, Kroger, and Walmart. The actual prep time runs closer to 70 minutes when you account for peeling and boiling potatoes, mashing, and then frying the hash; the stated 50 minutes skips that foundational work. At roughly $2.50 to $3.00 per serving, it's reasonable for a protein-forward comfort meal that reheats well the next day. This is a solid dish for a family that doesn't mind a starch-heavy plate and appreciates leftovers, though it demands a pan's attention during the final fry and won't appeal to anyone watching their saturated fat intake.
