Ingredients

1/2 pound white fish fillets (cod, halibut, or similar whitefish)

1 small onion, thinly sliced

2 tablespoons fresh lemon juice

1/2 teaspoon canola oil

3/4 teaspoon lemon pepper seasoning

1/2 teaspoon dried parsley

Paprika for garnish (optional)

Directions

  1. Preheat your oven to 350°F. Wash your hands thoroughly with soap and warm water before beginning.

  2. Pat the fish fillets dry with paper towels and arrange them on an ungreased baking sheet, spacing them apart so heat can circulate evenly.

  3. Distribute the sliced onion evenly over and around the fish fillets.

  4. Drizzle the lemon juice and canola oil across the fish and onions in an even distribution.

  5. Sprinkle the lemon pepper seasoning and dried parsley over the fish and vegetables. If desired, dust lightly with paprika for color and additional flavor.

  6. Cover the baking sheet with aluminum foil and let it stand at room temperature for 5 minutes to allow the flavors to begin melding.

  7. Transfer the covered baking sheet to the preheated 350°F oven and bake for 20 minutes, or until the fish flakes easily with a fork when tested with the tip of a knife. The fish should reach an internal temperature of 145°F and be opaque throughout.

  8. Remove from the oven and serve immediately while hot, with the pan juices and onions spooned over each portion.
