Ingredients
8 small ciabatta loaves
1 pound ground beef
1 teaspoon olive oil
3 cups chopped bell peppers (red, yellow, and green)
2 cups chopped mushrooms
salt to taste
freshly ground black pepper to taste
1½ cups pizza sauce
½ cup shredded cheddar cheese
Directions
Heat the olive oil in a large skillet over medium-high heat. Add the chopped bell peppers and sauté for 5 minutes, stirring occasionally.
Add the chopped mushrooms to the skillet, season with salt and pepper, and continue sautéing until the vegetables are soft, about 5-7 minutes. Drain any excess moisture and transfer to a bowl.
In the same skillet, brown the ground beef over medium-high heat, breaking it apart thoroughly with a wooden spoon and stirring frequently. Add a splash of water to help cook the meat evenly. Season with salt and pepper to taste.
Cook the ground beef until it reaches an internal temperature of 160°F (71°C), which typically takes 8-10 minutes. Drain off any excess fat and moisture.
Combine the cooked ground beef with the sautéed vegetables in the bowl. Stir in the pizza sauce and cheddar cheese until well mixed.
Preheat your oven to 400°F (200°C). Carefully cut the tops off each ciabatta loaf in a V-shape, creating an opening while leaving enough bread intact to hold the filling.
Spoon the pizza beef filling into each hollowed ciabatta loaf, distributing it evenly among all 8 loaves.
Place the filled ciabatta on a baking sheet and bake for 10-15 minutes if the loaves are fresh, or 20-30 minutes if they are frozen, until the filling is heated through and the bread is crispy on the outside.
