Sautéed Green Beans

Ingredients
1½ lb Green beans, stem ends trimmed
1 tablespoon Olive oil
Salt, to taste
Black pepper, to taste
Directions
Bring a 6-quart pot of salted water to a rolling boil. Add the trimmed green beans and cook uncovered for 1 to 2 minutes, just until they turn bright green and are crisp-tender. Drain the beans well in a colander.
Transfer the drained beans immediately to a bowl filled with ice water and cold water to stop the cooking process. Let sit for 1 to 2 minutes, then drain thoroughly and pat dry if needed.
Heat the olive oil in a 12-inch heavy skillet over moderately high heat until it shimmers but is not smoking. Add the blanched green beans and sauté, stirring occasionally, for 2 to 3 minutes until heated through and just tender.
Season the green beans with salt and black pepper to taste. Transfer to a serving dish and serve immediately while hot.
