Ingredients

1/2 cup unsalted butter, melted

1 large egg

1/3 cup creamy peanut butter

1 cup light brown sugar, packed

1 tablespoon vanilla extract

1 cup all-purpose flour

1 cup plus 2 tablespoons semi-sweet chocolate chips

Directions

  1. Preheat your oven to 350°F. Line an 8-by-8-inch baking pan with aluminum foil and coat it lightly with cooking spray; set aside.

  2. Place the melted butter in a large microwave-safe bowl. Let it cool for a moment, then whisk in the egg until fully incorporated, being careful not to scramble it.

  3. Add the peanut butter, brown sugar, and vanilla extract to the bowl. Whisk together until the mixture is smooth and well combined.

  4. Sprinkle the flour over the mixture and stir gently until just combined; do not overmix. Fold in 1 cup of the chocolate chips.

  5. Transfer the batter into the prepared pan, using a spatula to spread it evenly and smooth the top.

  6. Sprinkle the remaining 2 tablespoons of chocolate chips over the surface, gently pressing them slightly with the spatula.

  7. Bake for 20 to 25 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs—there should be no wet batter.

  8. Remove from the oven and allow the bars to cool in the pan for at least 30 minutes. Cut into 16 squares and serve. Store airtight at room temperature for up to 1 week, or freeze for up to 6 months.

Every ingredient is a supermarket staple at every major Charlotte chain—butter, eggs, peanut butter, brown sugar, vanilla, flour, and chocolate chips are universally available and cheap. At roughly $1.50–2.00 per serving for a simple bar cookie, this is genuinely economical. The 60-minute stated time is honest for mixing, baking, and cooling; no hidden prep tricks. This is a forgiving bar dough that requires zero attention once in the oven, reheats perfectly, and scales easily for a family or crowd.
