Ingredients
250 grams beef chuck or stewing beef, cut into chunks
1 beef bouillon cube
1 onion, chopped
1 tomato, diced
3 potatoes, peeled and cubed
1 carrot, peeled and sliced
1/2 cup green peas
salt and pepper to taste
Directions
Place the beef chunks in a large pot and cover with water. Bring to a boil over medium-high heat, then reduce heat and simmer for about 30-40 minutes until the beef is tender. Reserve the cooking broth and set the cooked beef aside.
In a separate large pot or Dutch oven, warm the pan over medium heat and add the chopped onion. Cook, stirring occasionally, until the onion is golden brown and softened, about 5-7 minutes. Add the diced tomato and cook for another 2-3 minutes until slightly softened.
Pour the reserved beef broth into the pot with the onions and tomatoes. Crumble in the beef bouillon cube and stir to dissolve. Add the cubed potatoes and sliced carrot. Bring the mixture to a simmer over medium heat.
Add the tender cooked beef and green peas to the pot. Simmer all ingredients together for 15-20 minutes until the potatoes are fully cooked and tender, and all flavors are well combined.
Season the stew with salt and pepper to taste. Serve hot, ensuring each bowl contains a good mix of beef, vegetables, and broth.
