This classic stir-fry features tender sliced sirloin steak and crisp-tender broccoli florets coated in a savory, slightly spicy soy-based sauce with garlic and a hint of lime. The beef is marinated briefly to build flavor, then quickly seared and combined with the vegetables in a glossy, umami-rich sauce. Ingredients

⅔ cup Low-sodium soy sauce, divided

½ lime Juice of 1/2 lime

3 tbsp Packed brown sugar, divided

2 tbsp Cornstarch, divided

Kosher salt

Freshly ground black pepper

1 lb Sirloin steak, sliced thinly against the grain

2 tbsp Vegetable oil, divided

3 cloves Garlic cloves, minced

⅓ cup Low-sodium beef or chicken broth

2 tsp Sriracha sauce, optional

1 head Fresh broccoli florets

Sesame seeds, for garnish

Green onions, thinly sliced, for garnish

Directions

  1. In a medium bowl, combine one-third cup of the soy sauce, lime juice, 1 tablespoon of the brown sugar, 1 tablespoon plus 1½ teaspoons of the cornstarch, ½ teaspoon kosher salt, and ¼ teaspoon freshly ground black pepper. Add the thinly sliced sirloin steak and toss well to coat evenly. Let the mixture sit at room temperature for 20 minutes to marinate.

  2. Meanwhile, mince the garlic cloves finely and set aside. Cut the broccoli head into florets and place them in a small bowl near your cooking station. In another small bowl, combine the minced garlic with the broccoli florets.

  3. In a small bowl or measuring cup, whisk together the beef or chicken broth, the remaining one-third cup soy sauce, 1 tablespoon cornstarch, 1 tablespoon brown sugar, and the sriracha sauce (if using). Set this sauce mixture aside near your stove for quick access during cooking.

  4. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add half of the marinated beef in a single layer and cook without stirring for 1 minute to develop a sear. Then stir and cook for approximately 1 minute more until the beef is cooked through and shows some browned spots. Transfer the cooked beef to a clean plate. Add the remaining 1 tablespoon of oil to the skillet and repeat with the remaining beef. Discard any excess marinade from the bowl.

  5. Reduce the heat to medium and add the remaining oil to the skillet if needed. Add the minced garlic to the skillet and cook, stirring occasionally, for about 2 minutes until fragrant. Add the broccoli florets and cook, stirring frequently, for about 1 minute until they begin to soften slightly. Pour in the prepared stir-fry sauce and stir gently. Cover the skillet and cook for 3 minutes.

  6. Uncover the skillet and return the cooked beef to the pan along with any accumulated juices. Toss everything together to coat with the sauce. Cook uncovered, tossing frequently, for 2 to 3 minutes more until the beef is heated through and the broccoli is crisp-tender.

  7. Divide the finished beef and broccoli stir-fry among four serving plates or bowls. Garnish each portion generously with sesame seeds and thinly sliced green onions before serving.
