Irish Banger Skillet

2 tablespoons Olive oil
1 pound Irish banger sausage
½ pound Red skinned potatoes, sliced thinly crosswise
1 medium Medium onion, sliced thinly crosswise
½ head Green cabbage, cored and thinly sliced
3 medium Carrots, peeled and sliced diagonally into 1/2 inch pieces
1½ cups Low sodium chicken or vegetable broth, divided
2 teaspoons Fresh thyme, divided
½ teaspoon Kosher salt
¼ teaspoon Freshly ground black pepper
Directions
Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the Irish banger sausages and brown them on all sides for 5-7 minutes until they reach an internal temperature of 165°F. Remove the sausages to a plate and slice them into 1-inch pieces.
In the same skillet, add the sliced potatoes and onion. Cook for 3-4 minutes, stirring occasionally, until they begin to soften and the onion becomes translucent.
Add the sliced cabbage and diagonal carrot pieces to the skillet. Stir to combine all vegetables and cook for 2 minutes.
Pour 1 cup of the broth into the skillet and sprinkle 1 teaspoon of fresh thyme over the vegetables. Stir gently to combine. Bring the mixture to a simmer.
Return the sliced sausages to the skillet, nestling them into the vegetables. Pour the remaining 1/2 cup of broth over the top and add the remaining teaspoon of thyme. Season with kosher salt and freshly ground black pepper.
Reduce heat to medium and simmer uncovered for 8-10 minutes, stirring occasionally, until the potatoes are tender and the carrots are cooked through. Serve hot directly from the skillet.
