Ingredients
2 baking potatoes (russet or similar), peeled and cut into 1/2-inch cubes
1/2 cup clarified butter, divided for frying and sautéing
48 large shrimp, peeled and deveined
2 cups fresh mushrooms, sliced
4 cloves garlic, minced
1/2 teaspoon cracked black pepper
1 (15-ounce) can early peas, drained
Directions
Heat a deep fryer or heavy pot with enough clarified butter to reach 2 to 3 inches depth. Preheat the oil to 350°F on a deep-fry thermometer.
Carefully add the potato cubes to the hot oil in small batches to avoid crowding. Fry for 8 to 10 minutes until the potatoes are tender inside and golden brown on the outside. Use a slotted spoon to transfer the cooked potatoes to a paper towel-lined plate. Season lightly with salt if desired.
Heat the remaining clarified butter in a large sauté pan over medium heat. Add the shrimp in a single layer and cook without stirring for about 1 to 2 minutes until the undersides turn opaque. Stir and continue cooking for another 1 to 2 minutes until all shrimp are pink throughout (the internal temperature should be translucent at the thickest point, approximately 1-2 minutes after all shrimp turn pink).
Add the sliced mushrooms to the pan with the shrimp and cook for 2 to 3 minutes, stirring occasionally, until the mushrooms are tender and release their moisture.
Stir in the minced garlic and cracked black pepper, then add the fried potato cubes. Continue cooking for 2 minutes, gently stirring to combine all ingredients.
Pour off any excess butter from the pan. Add the drained canned peas and stir gently until the peas are heated through, about 1 minute. Adjust seasoning if needed and serve immediately.
