Ingredients
1 whole chicken (3 to 4 pounds), cut into 8 pieces
Salt, to taste
Freshly ground black pepper, to taste
8 ounces Swiss cheese, grated on the large holes of a box grater
1 1/2 cups heavy cream
1/2 cup chicken stock
2 tablespoons Dijon mustard
Directions
Preheat your oven to 350°F. Pat the chicken pieces dry with paper towels and season generously all over with salt and freshly ground black pepper.
Arrange the seasoned chicken pieces skin-side up in a single layer in a large baking dish.
In a small bowl, whisk together the heavy cream, chicken stock, and Dijon mustard until well combined and smooth. Stir in the grated Swiss cheese until evenly distributed.
Pour the cream and cheese sauce evenly over the chicken pieces, making sure each piece is partially covered by the sauce.
Bake uncovered for 45 to 55 minutes, until the chicken reaches an internal temperature of 165°F when measured with a meat thermometer in the thickest part of the thigh without touching bone. The sauce should be bubbling at the edges and the cheese slightly golden on top.
Remove from the oven and let rest for 5 minutes before serving. Spoon the creamy sauce over each portion.
