Miso Tofu & Spring Onion Skewers

Smoky firm tofu chunks marinated overnight in a savory-sweet miso glaze infused with garlic, ginger, and sesame oil, then threaded onto skewers with spring onion pieces and grilled until charred. Finished with a sprinkle of toasted sesame seeds for a delicious vegetarian main course with Asian flavors.

Ingredients
375g firm smoked tofu, cut into large chunks
2 garlic cloves, crushed
1 thumb-sized piece of ginger, peeled and grated
1 tbsp white miso
1 tbsp honey or agave syrup
½ lime, juiced
1 tbsp soy sauce
2 tbsp sesame oil
2 spring onions, cut into 4cm lengths
2 tbsp sesame seeds
Directions
Place the tofu chunks into a medium bowl. In a separate bowl, whisk together the crushed garlic, grated ginger, white miso, honey or agave syrup, lime juice, soy sauce, and sesame oil until well combined. Pour the marinade over the tofu and gently toss until all pieces are coated. Cover the bowl with plastic wrap and refrigerate overnight to allow the flavors to develop.
Remove the marinated tofu from the refrigerator. Thread the tofu chunks and spring onion pieces alternately onto four large metal skewers, beginning and ending with tofu.
For grilling: Light the barbecue and allow the coals to turn ashen before cooking. Place the skewers on the grill and cook for 4-5 minutes on each side until the tofu develops light char marks. For oven grilling: Position a grill pan or oven grill under high heat and cook the skewers for 5-8 minutes on each side until the edges are golden and lightly charred.
Transfer the skewers to a serving plate and sprinkle the sesame seeds generously over the tofu and spring onions. Serve immediately while still warm.
