Ingredients

1 1/4 pounds ground turkey (dark meat or 93% lean or less)

3/4 cup grated Gruyère or Swiss cheese

2 cloves garlic, finely chopped

1/2 teaspoon chili powder

kosher salt and black pepper to taste

1 large onion, sliced into 1/2-inch-thick rounds

1 tablespoon olive oil

2 teaspoons Cajun or blackening spice mix

4 hamburger buns

Directions

  1. In a large bowl, combine ground turkey, grated cheese, chopped garlic, chili powder, salt, and pepper. Mix gently with your hands until just combined—do not overmix, as this will make the burgers tough. Divide the mixture into 4 equal portions and form each into a patty about 3/4 inch thick.

  2. Heat a grill or grill pan to medium-high heat. Once hot, place the turkey burgers on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F when measured with a meat thermometer inserted into the thickest part of each patty. Avoid pressing down on the burgers while cooking.

  3. While the burgers cook, toss the sliced onion rounds with olive oil and Cajun spice mix in a small bowl until evenly coated.

  4. Place the seasoned onions directly on the grill alongside the burgers. Grill for 4-5 minutes, stirring occasionally with a grill basket or tongs, until the onions are softened and charred at the edges.

  5. Lightly toast the hamburger buns on the grill for about 1 minute per side until golden.

  6. Assemble the burgers: place each cooked patty on a toasted bun and top generously with the grilled Cajun onions. Serve immediately.
