3 tablespoons butter

¼ cup diced yellow onion

1 red bell pepper, diced

1 yellow bell pepper, diced

8 oz baby portobello mushrooms, sliced

1 teaspoon minced garlic

4 cups fresh kale, chopped

1 tablespoon balsamic vinegar

¼ cup Asiago cheese, shredded

salt and black pepper to taste

Directions

  1. Heat 1 tablespoon of butter in a large skillet over medium heat until it foams.

  2. Add the diced onion and both red and yellow bell peppers. Sauté for 5–6 minutes, stirring occasionally, until the vegetables begin to soften and the peppers develop light caramelization at the edges.

  3. Add the remaining 2 tablespoons of butter to the skillet along with the sliced baby portobello mushrooms. Stir well to coat. Continue sautéing for 5–7 minutes, stirring occasionally, until the mushrooms release their moisture and turn golden brown.

  4. Stir in the minced garlic and cook for 30 seconds until fragrant.

  5. Add the chopped kale to the skillet along with the balsamic vinegar. Toss everything together to combine.

  6. Sauté for 4–5 minutes, stirring frequently, until the kale is bright green and just beginning to soften but still has some structure and texture.

  7. Remove from heat. Taste and season with salt and black pepper as needed.

  8. Divide between serving bowls and top each portion with shredded Asiago cheese. Serve immediately while warm.
