1 tablespoon baking powder
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried thyme
¼ teaspoon dried oregano
¼ teaspoon cumin
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
⅛ teaspoon cayenne pepper
3 pounds chicken wings, separated into drumettes and flats
¼ cup butter
¼ cup Louisiana-style hot sauce
1 tablespoon Worcestershire sauce
Directions
In a small bowl, combine baking powder, paprika, garlic powder, onion powder, thyme, oregano, cumin, salt, black pepper, and cayenne pepper. Mix thoroughly until all spices are evenly distributed.
Pat the chicken wings dry with paper towels. Toss the wings in a large bowl with the Cajun spice mixture, ensuring every piece is evenly coated. Let rest for 5 minutes.
Preheat your grill to medium-high heat (about 375–400°F). Oil the grill grates lightly to prevent sticking.
Place the seasoned wings directly on the grill grates. Grill for 15–20 minutes, turning every 4–5 minutes, until the internal temperature reaches 165°F and the skin is crispy and charred in spots.
While the wings finish cooking, melt the butter in a small saucepan over low heat. Stir in the Louisiana-style hot sauce and Worcestershire sauce until smooth.
Transfer the grilled wings to a large bowl. Pour the butter-hot sauce glaze over the wings and toss to coat evenly.
