Ingredients
1½ cups Cabbage, thinly shredded
1½ teaspoons Oil
¼ teaspoon Mustard seeds
4 Curry leaves
2 small Green chilies, slit lengthwise
Salt, to taste
2 drops Fresh lemon juice
Directions
Place a medium pan over medium heat and add the oil. Allow the oil to become hot, then add the mustard seeds. Cook until they begin to crackle and pop, releasing their fragrant aroma.
Add the curry leaves and slit green chilies to the pan. Stir and sauté for approximately one minute until the aromatics infuse into the oil and become fragrant.
Add the shredded cabbage and salt to the pan. Toss everything together thoroughly to ensure the cabbage is evenly coated with the aromatic oil mixture.
Cook for 2 minutes only, stirring occasionally. The cabbage should remain mostly crisp and crunchy, with only 30-40 percent cooked through. Avoid overcooking.
Remove the pan from heat. Squeeze the lemon juice drops over the top of the cabbage and mix gently to distribute.
Transfer to a serving plate and serve warm. Optionally garnish with fresh chopped cilantro if desired.
