Ingredients
1 cup water
1 cup sugar
2 cups frozen raspberries
6 cups watermelon, cut into chunks
2 tbsp lemon juice
2 cups light whipped topping
Directions
In a small saucepan, combine water and sugar. Bring to a boil over medium-high heat, stirring occasionally until the sugar completely dissolves. Remove from heat and allow the syrup to cool to room temperature.
Add the frozen raspberries and watermelon chunks to a food processor. Puree until smooth.
Pour the cooled sugar syrup and lemon juice into the puree and pulse to combine.
Add the whipped topping and puree until fully incorporated and the mixture has a uniform, creamy texture.
Transfer the sorbet mixture to a freezer-safe container. Freeze for at least 2-3 hours, or until it reaches your desired consistency, stirring occasionally if a softer texture is preferred.
