Mint & Mango Iced Green Tea

Ingredients
1 mango, peeled, stoned, and chopped
100g granulated sugar
4 tsp green tea leaves
small bunch small bunch fresh mint
1 lime, sliced

Directions
Cut the mango in half and separate half of the chopped mango pieces. Place the reserved half into a saucepan with the granulated sugar and 100ml of water. Bring to a gentle simmer over medium heat and cook for 8-10 minutes until the mango softens and the sugar fully dissolves. Pour the mixture through a fine-mesh sieve, pressing gently on the solids to extract all the syrup. Discard the solids and set the mango syrup aside to cool to room temperature.
While the syrup cools, pour 500ml of freshly boiled water into a large heatproof jug. Add the green tea leaves and allow them to steep for 5 minutes. Strain the brewed tea into a clean large glass jug, discarding the tea leaves. Stir in 300ml of cold water to help it cool faster, then refrigerate the tea until it is completely chilled, about 30 minutes to 1 hour.
Once the chilled tea is ready, pour the cooled mango syrup into the jug of tea and stir to combine. Add the remaining chopped fresh mango pieces and the fresh mint leaves. Arrange the lime slices in the jug. Fill the jug with ice, give it a gentle stir, and serve immediately.
