Ingredients

3 to 4 boneless, skinless chicken breasts

1/2 teaspoon coarse salt

Pepper to taste

2 tablespoons olive oil

1/2 yellow onion, diced very fine

1 cup dry red wine

1/2 cup pure maple syrup

1/2 cup dried cranberries

4 teaspoons cornstarch

4 teaspoons water

Directions

  1. Preheat your oven to 350°F. Pat the chicken breasts dry with paper towels and arrange them on a baking sheet. Season both sides evenly with salt and pepper. Bake until the thickest part of each breast reaches an internal temperature of 165°F, approximately 30 to 35 minutes depending on thickness. Remove from the oven and set aside.

  2. While the chicken is baking, warm the olive oil in a small saucepan over medium heat.

  3. Add the diced onion to the hot oil and cook, stirring frequently, until the onion becomes translucent and softened, about 5 minutes.

  4. Pour in the red wine, maple syrup, and dried cranberries. Increase the heat to medium-high and bring the mixture to a boil, stirring occasionally. Once boiling, maintain the boil for approximately 5 minutes, stirring frequently to combine all ingredients and allow the flavors to develop.

  5. In a small bowl, whisk together the cornstarch and water until completely smooth, with no lumps. While continuing to stir the sauce, slowly pour the cornstarch slurry into the saucepan. Reduce the heat to medium and cook for about 1 to 2 minutes, stirring constantly, until the sauce thickens and becomes glossy.

  6. Place each cooked chicken breast on a serving plate or platter and generously spoon the warm maple cranberry sauce over the top. Serve immediately.
