Breakfast Burritos – Campfire Style

Ingredients
1 (4.5 oz) can roasted green chiles
1/4 cup fresh cilantro, chopped
8 oz cooked ham, diced into small cubes
12 large eggs
8 (12-inch) flour tortillas
1 cup frozen shredded hash browns, thawed
1/2 tablespoon olive oil
2 cups (8 oz) shredded cheddar cheese
1 tablespoon taco seasoning
Directions
Heat olive oil in a large skillet over medium-high heat.
Add the thawed hash browns and cook for 1 minute, stirring constantly to coat with oil.
Add the diced ham and continue cooking, stirring occasionally, until the hash browns are golden and crispy and the ham is lightly browned, approximately 8-10 minutes.
While the hash browns and ham are cooking, whisk together the 12 eggs in a large bowl until well combined. Stir in the taco seasoning until evenly distributed.
Pour the egg mixture into the skillet with the hash browns and ham. Cook over medium heat, stirring frequently, until the eggs are fully set and no liquid remains, about 3-5 minutes. The internal temperature should reach 160°F.
Remove from heat and gently fold in the roasted green chiles, shredded cheddar cheese, and fresh cilantro until evenly distributed.
Warm the flour tortillas either over the skillet, in a microwave, or in a dry skillet until they are pliable and warm.
Place one tortilla on a flat surface. Spoon approximately 1/8 of the egg and ham mixture down the center of the tortilla.
Fold in the sides of the tortilla about 1-2 inches, then roll tightly from one end to the other, creating a secure cylinder. Immediately wrap the burrito tightly in aluminum foil.
Repeat with remaining tortillas and filling. Store wrapped burritos in a refrigerator or cooler until ready to cook.
To cook at the campfire, place foil-wrapped burritos directly in hot coals at the edge of the fire or on a grill grate above hot coals. Heat for 10-15 minutes, turning once halfway through, until heated through completely. Cooking time may vary depending on coal temperature.
