1 cup streusel topping mix

1 cup seasoning mix for sweet potatoes

8 tablespoons cold unsalted butter, finely diced

8 tablespoons unsalted butter

4 pounds sweet potatoes, peeled and cut into 1-inch cubes

1 cup whole milk

salt to taste

Directions

  1. Combine the streusel topping mix in a medium bowl. Using a pastry blender or fork, work the 8 tablespoons of cold diced butter into the streusel mix until the texture resembles coarse breadcrumbs and all the butter is incorporated. Test by squeezing a small handful; it should hold together momentarily but break apart easily. Cover and refrigerate until ready to use.

  2. Preheat your oven to 375°F (190°C). Lightly coat a 13-by-9-inch baking dish with butter or cooking spray.

  3. Place the sweet potato cubes in a large pot and cover with lightly salted water, allowing 1 inch of water above the potatoes. Bring to a rolling boil over high heat. Reduce to medium heat and simmer gently for 8 to 10 minutes, until the sweet potatoes are fork-tender. Drain well in a colander.

  4. Return the drained sweet potatoes to the pot (or transfer to a food processor for a smoother texture). Add the seasoning mix, the remaining 8 tablespoons of butter, and the milk. Mash vigorously with a potato masher until the mixture is well combined and creamy, or puree in the food processor until smooth.

  5. Spread the sweet potato mixture evenly into the prepared baking dish. Distribute the chilled streusel topping evenly over the surface, allowing some gaps so the cream filling shows through.

  6. Transfer the casserole to the preheated 375°F (190°C) oven and bake for 25 to 30 minutes, until the streusel topping is golden brown and the casserole is heated through.

  7. Remove from the oven and allow the casserole to rest for 5 minutes before serving. This helps the layers set slightly and makes serving easier.
