Ingredients

12 ounces Pork loin, two 6-ounce pieces, about 1 inch thick

2 teaspoons Soy sauce

1 teaspoon White pepper

1 teaspoon Sugar

¼ cup Water

Honey, optional

2 inches Vegetable oil, for frying

Steamed rice, for serving

Directions

  1. Using a meat mallet, pound each pork loin piece on both sides until flattened to approximately 1/4 inch thick.

  2. In a nonreactive bowl, whisk together soy sauce, white pepper, sugar, and water until well combined. Stir in honey if using.

  3. Place the pounded pork pieces in the marinade and turn to coat completely on all sides. Cover and refrigerate for at least 4 hours, or preferably overnight.

  4. Pour vegetable oil to a depth of 2 inches into a heavy-bottomed pot or deep cast-iron skillet. Heat the oil over medium-high heat to 350°F.

  5. Remove the pork from the refrigerator. Carefully lift each piece out of the marinade, gently shaking off excess liquid, and place it into the hot oil.

  6. Fry the pork pieces, turning occasionally, until the exterior is light golden brown, approximately 5 minutes total. The internal temperature should reach 145°F when measured with a meat thermometer.

  7. Using a slotted spoon or tongs, transfer the fried pork to a paper towel-lined plate to drain briefly.

  8. Serve the pork chops immediately over steamed rice.
