Chicken Parmesan Burgers

Ingredients
10 slices French bread slices (4 inches diameter, 1/2-inch thick)
½ cup Finely grated Parmesan cheese
4 tablespoons Fresh basil, minced, divided
12 leaves Large fresh basil leaves
¾ cup Purchased refrigerated marinara sauce
12 ounces Ground chicken (white meat)
2 tablespoons Extra-virgin olive oil, divided
1 tablespoon Grated onion
¼ teaspoon Salt
4 ounces Whole-milk mozzarella cheese, thinly sliced
4 leaves Fresh radicchio leaves
Freshly ground black pepper
Directions
Remove crusts from 2 of the bread slices and dice them into small pieces. Process the diced bread in a food processor until it forms fine crumbs. Add the grated Parmesan cheese and 2 tablespoons of minced basil to the processor and pulse until well combined. Transfer the mixture to a shallow dish.
Combine the marinara sauce with the remaining 2 tablespoons of minced basil in a small saucepan. Transfer 1 1/2 tablespoons of the basil-marinara mixture to a large bowl. Add the ground chicken, 1/2 tablespoon of olive oil, grated onion, salt, and a pinch of black pepper to the bowl. Mix gently until just combined. Divide the mixture into four equal portions and shape each into a patty about 1/2-inch thick. Coat each patty thoroughly with the Parmesan-herb crumb mixture on both sides. Set the saucepan with remaining sauce over low heat to warm gently.
Heat the remaining 1 1/2 tablespoons of olive oil in a large nonstick skillet over medium heat. Once hot, carefully place the coated chicken patties in the skillet. Cook without moving for 4 minutes until the bottoms are golden brown and crispy. Using a spatula, flip each patty over and immediately top with sliced mozzarella cheese. Continue cooking for 3 minutes, then cover the skillet and cook for about 1 more minute until the chicken reaches an internal temperature of 165°F and the cheese is completely melted.
Toast the remaining 8 bread slices until golden and crispy. Place a toasted bread slice on a plate, top with a fresh radicchio leaf, then place a cooked chicken patty on the radicchio. Arrange 3 of the fresh basil leaves on the patty and drizzle generously with the warm marinara sauce. Top with another toasted bread slice and serve immediately. Repeat to assemble the remaining three burgers.
