Ingredients

1 lb. udon noodles

¼ cup sriracha

3 tbsp. low-sodium soy sauce

2 tbsp. sesame oil, divided

1 lb. medium shrimp, peeled and deveined

2 bell peppers, sliced

1 small cucumber, thinly sliced

4 green onions, thinly sliced, plus more for garnish

Directions

  1. Bring a large pot of salted water to a boil. Add udon noodles and cook according to package directions until tender but still with a slight firmness to the bite. Drain well and set aside.

  2. In a small bowl, whisk together the sriracha, soy sauce, and sesame oil until smooth and well combined. Set the sauce aside.

  3. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. When the oil is hot, add the shrimp and cook for about 3 minutes, stirring occasionally, until they turn pink and opaque. Transfer the cooked shrimp to a clean plate.

  4. In the same skillet, heat the remaining 1 tablespoon of sesame oil. Add the sliced bell peppers, cucumber, and sliced green onions. Cook for 5 to 6 minutes, stirring frequently, until the vegetables soften and develop light browning at the edges.

  5. Return the cooked shrimp to the skillet. Add the cooked noodles and the prepared sriracha sauce. Toss everything together for 2 to 3 minutes until the noodles and shrimp are evenly coated and heated through.

  6. Divide the sriracha shrimp and noodles among serving bowls. Garnish with additional sliced green onions and serve immediately.

Shrimp and fresh vegetables are available at every major Charlotte chain, and udon noodles have become standard at Kroger, Harris Teeter, and Walmart; sriracha and sesame oil are pantry staples now, so no special stops required. The thirty-minute claim is honest for a weeknight—noodles cook while you prep the vegetables and toss the shrimp, and it comes together in one pan. Cost per serving runs around $4–$5 depending on shrimp price and whether you already have the condiments on hand. The caveat is that this is a same-night dish; leftovers congeal and the noodles absorb the sauce unpleasantly overnight, so plan for four appetites at one table.
