Ingredients
2 Pork chops
1 Medium sweet potato, peeled
½ Medium orange, halved
1 tablespoon Cooking oil
Ground cinnamon, to taste
Salt, to taste
Black pepper, to taste
Directions
Wash your hands thoroughly with soap and warm water before beginning food preparation.
Preheat your oven to 350°F.
Heat 1 tablespoon of oil in a medium skillet over medium-high heat. Once hot, add the pork chops and brown them for 3–4 minutes per side until they develop a golden crust. Remove from heat.
Peel the sweet potato and cut it into 1/2-inch thick slices.
Slice the orange into thin rounds.
Transfer the browned pork chops to a baking dish. Arrange the sweet potato slices around the chops, then layer the orange slices on top of the pork. Lightly season with cinnamon, salt, and black pepper if desired.
Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for approximately 1 hour, until the sweet potato is very tender and the pork reaches an internal temperature of 145°F when measured at the thickest point.
Remove from the oven, let rest for a few minutes, and serve while hot.
