Ingredients

2 sheets matzo, broken into small pieces

2 tablespoons unsalted butter

4 eggs at room temperature, beaten

Salt to taste

Directions

  1. Place the broken matzo pieces in a colander and rinse under cool running water until they are well moistened. Allow them to drain thoroughly.

  2. Melt the unsalted butter in a non-stick skillet over medium heat, stirring occasionally until the butter is hot and foamy.

  3. Add the drained matzo to the bowl containing the beaten eggs and stir gently to coat the matzo evenly. Let the mixture sit for about one minute to allow the matzo to absorb some of the egg.

  4. Pour the matzo and egg mixture into the hot skillet and cook, stirring constantly with a spatula, until the eggs are fully scrambled and cooked through, approximately 3 to 4 minutes.

  5. Remove from heat, season with salt to taste, and serve immediately while warm.
