Ingredients
1 can or bottle (12 oz) beer
3 lbs chicken pieces or whole chicken
2 cloves fresh garlic, minced (or 1 teaspoon freeze-dried garlic)
6 green onions, chopped (or 2 tablespoons freeze-dried shallots)
1 teaspoon hot sauce
1 teaspoon kosher salt
1/4 cup Dijon mustard or yellow mustard
2 tablespoons Worcestershire sauce
Directions
Pour the beer into a large mixing bowl.
Add the kosher salt, chopped green onions (or freeze-dried shallots), minced garlic (or freeze-dried garlic), Worcestershire sauce, hot sauce, and mustard to the bowl.
Whisk all ingredients together until well combined and the salt is fully dissolved.
Place the chicken in a large resealable bag or shallow dish and pour the marinade over it, ensuring all pieces are covered.
Refrigerate for at least 30 minutes for a light marinade, or up to 8 hours for deeper flavor development, turning the chicken occasionally if possible.
Remove chicken from the marinade and grill over medium-high heat, bake at 375°F, or pan-sear until the internal temperature reaches 165°F, using a meat thermometer to verify doneness.
