Ingredients
1 pound fresh raspberries
1½ tablespoons natural cane sugar
0.06 teaspoon saffron threads
1 2-inch segment vanilla bean, 2-inch segment
3 tablespoons extra virgin olive oil
handful golden raisins
½ cup sliced almonds, toasted
1 whole lemon zest lemon zest
Directions
In a small bowl, steep the saffron threads in 2 tablespoons of warm water for 5 minutes to release their color and flavor.
Split the vanilla bean segment lengthwise and scrape out the seeds with the tip of a knife; set seeds aside.
Gently place the raspberries in a shallow serving bowl or dish, being careful not to crush them.
Drizzle the extra virgin olive oil over the raspberries and sprinkle with the natural cane sugar.
Pour the steeped saffron and its water over the berries, then scatter the vanilla seeds across the top.
Sprinkle the lemon zest evenly over the raspberries.
Scatter the golden raisins and toasted almonds over the top, distributing them evenly.
Let the dish rest at room temperature for 10 minutes to allow the flavors to meld before serving.
