Greek-Style Beef Pita

Ingredients
1 pound beef sirloin tip steaks
1 tablespoon lemon pepper seasoning
2 to 3 teaspoons vegetable oil
3/4 cup plain or seasoned hummus
4 whole wheat pita breads, cut in half
Directions
Arrange the beef steaks on a cutting board and slice them in half lengthwise. Then cut each half crosswise into 1-inch wide strips. Transfer the beef strips to a medium bowl and toss with the lemon pepper seasoning until evenly coated.
Heat 2 teaspoons of vegetable oil in a large nonstick skillet over medium-high heat until shimmering. Add half of the seasoned beef strips to the pan in a single layer. Stir-fry for 1 to 3 minutes, stirring frequently, until the outside surface of the beef is no longer pink. The beef should remain tender inside and not be overcooked. Transfer the cooked beef to a clean plate.
If needed, add the remaining 1 teaspoon of oil to the skillet. Add the remaining beef strips and cook using the same method from Step 2, stirring frequently for 1 to 3 minutes until the outside is no longer pink. Transfer to the plate with the first batch.
Carefully open each pita bread half to form a pocket. Spread approximately 3 tablespoons of hummus evenly inside each pocket. Divide the cooked beef strips equally among the pita pockets and add any desired toppings. Serve immediately while the pita is still warm.
