Ingredients
2 pounds bone-in, skin-on chicken thighs (about 6 pieces)
Kosher salt
Freshly ground black pepper
12 ounces medium red potatoes, very thinly sliced
3 tablespoons extra-virgin olive oil
1 can (14 ounces) fire-roasted diced tomatoes
⅛ teaspoon ground cinnamon
1 teaspoon chopped fresh oregano leaves
4 fresh oregano sprigs
1 cup pitted and halved green olives, such as Castelvetrano
2 shallots, peeled and thinly sliced
Directions
Preheat your oven to 400°F. Pat the chicken thighs dry with paper towels and season both sides generously with kosher salt and freshly ground black pepper.
Heat the extra-virgin olive oil in a large ovenproof skillet over medium-high heat. Once shimmering, place the chicken thighs skin-side down and sear for about 4 minutes until the skin is golden and crispy. Flip and sear the other side for 2 minutes. Transfer the chicken to a plate.
In the same skillet, add the sliced shallots and cook over medium heat for about 2 minutes until softened and fragrant, stirring occasionally.
Stir in the ground cinnamon and chopped fresh oregano leaves, cooking for 30 seconds until fragrant.
Add the fire-roasted diced tomatoes (including juice) and the green olives to the skillet. Stir to combine.
Arrange the thinly sliced red potatoes in an even layer in the skillet, nestling them into the tomato sauce. Place the seared chicken thighs skin-side up on top of the potatoes and sauce. Scatter the oregano sprigs over the chicken.
Transfer the skillet to the preheated oven and bake, uncovered, for 35 to 40 minutes until the potatoes are tender when pierced with a fork and the chicken reaches an internal temperature of 165°F at the thickest part of the thigh.
Remove from the oven and let rest for 5 minutes. Taste and adjust seasoning with additional salt and pepper if needed before serving.
