Ingredients
1 pound dry Great Northern beans, sorted and rinsed
2 cups water
2 cans (10 oz each) diced tomatoes with green chiles
2 cups cubed cooked ham
1 cup frozen corn kernels
1 medium onion, chopped
1 red bell pepper, chopped
2 medium tomatoes, chopped
1 envelope (1.25 oz) gluten-free taco seasoning
Fritos corn chips for serving
Directions
Sort through the dry beans and remove any rocks, debris, or shriveled or discolored beans. Rinse the sorted beans thoroughly under cold running water until the water runs clear.
Place the rinsed beans into the inner pot of your pressure cooker.
Add the water, canned diced tomatoes with green chiles, cubed ham, frozen corn, chopped onion, chopped red pepper, chopped fresh tomatoes, and taco seasoning to the pot with the beans. Stir well to combine all ingredients.
Secure the pressure cooker lid according to your cooker's instructions, ensuring the pressure release valve is set to the closed/seal position.
Cook under high pressure for 50 minutes. Once the cooking cycle is complete, carefully release the pressure using your cooker's manual release valve, following the manufacturer's safety guidelines.
Open the pressure cooker lid once all pressure has been released. Stir the chili and taste for seasoning, adjusting salt and pepper as needed.
Ladle the chili into bowls and top each serving generously with Fritos corn chips just before serving for added crunch and flavor.
Comments
Every ingredient is a standard find at any Charlotte supermarket—beans, canned tomatoes, ham, peppers, and Fritos are in stock everywhere from ALDI to Publix. At roughly $1.50–$2.00 per serving, it's genuinely economical, driven by canned beans and pantry staples rather than specialty proteins. The stated 55 minutes is honest for pressure-cooker assembly and cook time, though add five minutes for venting; it's a set-and-forget dish that doesn't demand constant attention. Leftovers reheat perfectly in the microwave or stovetop, and the recipe lands solidly in North Carolina comfort-food territory—white beans and ham have deep roots here—though it's not region-specific enough to feel revelatory.
