Ingredients

1 small onion, finely chopped

4 sesame-topped burger buns

300g ground beef steak

1 tablespoon sunflower oil

1 small wedge small wedge of iceberg lettuce, finely shredded

2 slices of mild cheddar or burger cheese

1 gherkin, sliced lengthways

100g mayonnaise

1 tablespoon American mustard

1 large pinch large pinch of garlic granules

1 large pinch large pinch of onion granules

¼ teaspoon smoked paprika

1 tablespoon white wine vinegar

1 teaspoon pickle relish or finely chopped gherkin

Directions

  1. Place the chopped onion in a small bowl and pour boiling water over it until just covered. Let cool completely. In another small bowl, whisk together the mayonnaise, mustard, garlic granules, onion granules, and smoked paprika. Once the onions have cooled, strain them and add 1 tablespoon of the reserved onion water to the sauce mixture. Stir until well combined and set aside.

  2. Cut two of the burger buns in half horizontally. From the remaining two buns, carefully cut a thick slice from the center of each. Toast or grill the center slices on both sides until golden, and toast the halved buns on their cut sides only until lightly golden. Set the toasted bun pieces aside. Preheat your oven to 200°F (100°C).

  3. Divide the ground beef into four equal loose piles. Lightly season each pile with salt and pepper. Heat ¼ tablespoon of sunflower oil in a heavy skillet or frying pan over high heat. Place one beef pile into the hot pan. Quickly cover it with a square of baking parchment paper, then carefully use another heavy pan to press firmly down on the patty for about 10 seconds, being careful of the heat and steam. Remove the weight and paper, then cook the patty undisturbed for 2 minutes. Flip the patty and press down gently with a spatula, cooking for another 1 minute. Transfer to a baking tray and keep warm in the oven. Repeat this process with the remaining three beef piles, cooking one patty at a time.

  4. To assemble each burger, spread a generous amount of the special sauce on the bottom half of a toasted bun half. Layer with a portion of the cooled caramelized onions, followed by some of the shredded iceberg lettuce, then a slice of cheddar cheese, then one of the beef patties, and finally a few slices of gherkin. Place one of the thick toasted center slices on top, then spread more sauce on this middle piece. Add another layer of onions and lettuce, then top with a second beef patty. Crown the burger with the top half of the toasted bun.

  5. Serve the assembled burgers immediately while the beef is still warm, alongside the oven fries. Offer extra special sauce on the side for dipping or additional topping.
