Peanut Butter Oreo Blondies

Ingredients
½ cup butter, softened
1 cup packed brown sugar
½ cup granulated sugar
¾ cup creamy peanut butter
1 teaspoon vanilla extract
2 large eggs
1¾ cups all-purpose flour
1 teaspoon baking powder
16 to 24 Oreo cookies, depending on pan size
1 cup white chocolate chips (optional)
Directions
Preheat your oven to 325°F. Grease a 9-inch square baking pan for thicker blondies, or a 9x13-inch rectangular pan for thinner bars.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
Beat in the peanut butter and vanilla extract until well combined.
Add the eggs one at a time, beating well after each addition until fully incorporated.
In a separate bowl, whisk together the flour and baking powder. Add the dry ingredients to the peanut butter mixture and stir with a wooden spoon or mix on low speed for less than 1 minute, just until all flour disappears. Do not overmix, as this will make the batter tough.
If using white chocolate chips, fold them in gently until evenly distributed. The batter should be thick but still spreadable.
Spread half of the batter evenly into the prepared pan. Arrange the Oreo cookies in a single layer on top of the batter, spacing them as evenly as possible.
Carefully spread the remaining batter over the Oreos, covering them completely.
Bake for 40-50 minutes, depending on your pan size (square pans require longer baking than rectangular pans). Bake until the edges are golden brown and the center is just slightly soft and set. The bars will continue to set as they cool.
Remove from the oven and allow to cool completely in the pan before cutting into 16 squares. The center may settle slightly as it cools, which is normal and adds to the fudgy texture.
