Ingredients

2 golden potatoes, peeled and cut into small cubes

5 bratwurst sausages, sliced into 1/4-inch rounds

1/2 yellow onion, chopped

2 tablespoons olive oil

1 cup sauerkraut, drained

Salt and pepper to taste

Directions

  1. Wash and peel the golden potatoes, then cut them into bite-sized cubes. Place the cubes in a bowl of water and let them soak for 15 minutes to remove excess starch, then drain well.

  2. Chop the yellow onion into pieces of similar size.

  3. Slice the bratwurst sausages into 1/4-inch-thick rounds.

  4. Heat a large skillet over medium-high heat. Add the olive oil, then add the bratwurst slices in a single layer. Cook for 5-7 minutes, stirring occasionally, until the sausages are browned on the edges. Remove the cooked sausages to a clean plate and set aside.

  5. In the same skillet with the rendered fat, add the drained potato cubes and chopped onion. Cook over medium-high heat for 10-12 minutes, stirring occasionally, until the potatoes are tender and golden brown and the onion becomes translucent.

  6. Return the cooked bratwurst slices to the skillet and add the drained sauerkraut. Stir gently to combine all ingredients and cook for 1-2 minutes until heated through.

  7. Taste the hash and season with salt and pepper as needed. Serve hot directly from the skillet.
