Ingredients
1 lb Irish sausages (bangers)
1 lb Irish bacon (rashers)
1–2 medium onions, quartered
1 lb potatoes, quartered
1–2 cups carrots, chopped
1–2 tbsp fresh parsley, chopped
1–2 tsp ground black pepper
4–5 cups cold water
Directions
Heat a large skillet over medium heat. Add the Irish sausages and bacon to the skillet and brown them on all sides, about 8–10 minutes, until the meat releases some of its fat and develops color. Transfer the cooked meat to a cutting board and allow it to cool slightly.
Once the meat is cool enough to handle, cut the sausages into thirds and chop the bacon into approximately 1-inch pieces.
Place the quartered onions in the bottom of your slow cooker.
Layer the browned sausage pieces and chopped bacon on top of the onions.
Add the chopped carrots as the next layer.
Top the mixture with the quartered potatoes. Sprinkle the fresh parsley and ground black pepper evenly over the top.
Pour the cold water over all the ingredients until they are just covered.
Cover the slow cooker and cook on the low setting for 5 to 6 hours, until the potatoes are tender when pierced with a fork and the flavors have melded together.
Ladle the coddle into bowls and serve hot.
