Ingredients
½ cup red onion, chopped
½ cup fresh lime juice
8 cups watermelon, rind and seeds removed, chopped into 1-inch cubes
½ cup crumbled feta cheese
¼ cup fresh mint leaves, thinly sliced
½ cup fresh parsley leaves, chopped
Directions
In a large bowl, combine the chopped red onion and fresh lime juice. Let sit for 2-3 minutes to allow the onion to soften slightly and absorb some of the citrus flavor.
Add the watermelon cubes to the bowl and gently toss with the onion and lime juice.
Fold in the crumbled feta cheese, thinly sliced mint, and chopped parsley, being careful not to crush the watermelon pieces.
Gently toss all ingredients together until evenly distributed. Serve immediately or chill until ready to serve.
