Ingredients

½ cup old fashioned oats

½ cup sliced almonds, toasted

½ cup toasted coconut flakes

2 tablespoons cacao nibs

3 tablespoons mini dark chocolate chips

1 tablespoon chia seeds

2 tablespoons flaxseeds

½ teaspoon sea salt

½ cup almond butter

2 tablespoons coconut oil

½ cup raw honey

1 teaspoon pure vanilla extract

Directions

  1. In a large mixing bowl, combine the oats, toasted almonds, toasted coconut flakes, cacao nibs, dark chocolate chips, chia seeds, flaxseeds, and sea salt. Whisk together until all dry ingredients are evenly distributed.

  2. In a small saucepan, combine the almond butter, coconut oil, honey, and vanilla extract. Heat over medium-low, stirring constantly for 2–3 minutes until the mixture is smooth, warm, and fully combined.

  3. Pour the warm wet mixture over the dry ingredients and stir thoroughly until no dry pockets remain and all ingredients are evenly coated.

  4. Allow the mixture to cool for 3–5 minutes until it is cool enough to handle comfortably.

  5. Using a small spoon or your hands, roll the mixture into 24 balls, each approximately 1 inch in diameter. For easier rolling, you can lightly oil your hands.

  6. Transfer the energy bites to an airtight container and refrigerate for at least 1 hour before serving. Store covered in the refrigerator for up to 2 weeks.
