Ingredients

1 cup uncooked lentils, rinsed

½ cup bulgur

2½ cups water or vegetable broth

¼ cup green curry paste

¾ teaspoon turmeric

1 tablespoon tomato paste

1½ tablespoons butter

2 cloves garlic, minced

2 teaspoons garam masala

½ cup coconut milk

1 teaspoon fresh ginger, peeled and minced

2 cups fresh spinach, stems removed

1 teaspoon sea salt

Greek yogurt for topping (optional)

Directions

  1. Rinse the lentils and combine them with bulgur, 2 cups water (or vegetable broth), green curry paste, and turmeric in a medium saucepan. Bring to a boil over high heat, then reduce to a simmer.

  2. Simmer for 15–20 minutes, stirring occasionally, until the lentils are mostly tender and the bulgur is cooked through. If the liquid is absorbed before the lentils are done, add the remaining ½ cup water in small amounts as needed. The mixture should eventually have very little to no liquid remaining.

  3. Once the lentils and bulgur are cooked and most of the liquid has been absorbed, reduce the heat to medium-low. Stir in the tomato paste until well combined.

  4. Add the butter, minced garlic, and garam masala. Stir continuously until the butter is fully melted and all ingredients are evenly distributed.

  5. Pour in the coconut milk and stir to combine. Simmer for another 5–10 minutes over medium-low heat, stirring occasionally, until the mixture becomes thick and creamy.

  6. Remove from heat. Stir in the minced ginger and fresh spinach, mixing gently until the spinach just begins to wilt. If desired, serve each portion topped with a dollop of Greek yogurt and additional fresh spinach on the side.
