Ingredients
½ cup plus more for greasing Butter, melted (1/2 cup or 112 g), plus more for greasing
1 cup Light brown sugar, tightly packed (1 cup)
1 Egg, lightly beaten (1 large)
1 tablespoon Almond extract (1 tablespoon)
1 cup All-purpose flour (1 cup or 128 g)
½ teaspoon Baking powder (1/2 teaspoon)
⅛ teaspoon Baking soda (1/8 teaspoon)
pinch Salt (1 pinch)
⅓ cup Blanched almonds, toasted and chopped (1/3 cup)
9 pieces Whole almond halves for topping (9 pieces)
Directions
Preheat your oven to 350°F. Grease an 8x8-inch baking pan with butter and set aside. If using raw blanched almonds, spread them on a baking sheet and toast in the oven for 5 to 7 minutes until fragrant, then let cool before chopping into rough pieces.
In a medium bowl, whisk together the melted butter and light brown sugar until completely smooth with no lumps remaining.
Add the beaten egg and almond extract to the butter mixture, whisking until fully incorporated.
In a separate small bowl, whisk together the flour, baking powder, baking soda, and salt.
Add the dry ingredients to the wet ingredients and stir until just combined and smooth. Fold in the chopped toasted almonds.
Pour the batter into the prepared pan and smooth the surface with a spatula. If desired, lightly score the surface with a knife to mark where you will cut the squares after baking.
Press one whole almond half, cut side down, into the center of each square (creating a 3x3 grid for 9 squares).
Bake at 350°F for 20 to 25 minutes until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
Remove from the oven and let cool completely in the pan before cutting into 9 squares along the scored lines.
