Ingredients
90g pack Indian spiced lentils
160g cherry tomatoes, quartered
150g cooked skinless chicken breast, chopped
handful handful fresh coriander, chopped
4 tablespoons tzatziki
Directions
Carefully tear open one corner of the Indian spiced lentil packet. Microwave the contents on high power for 1 minute until heated through.
Remove from the microwave and let the lentils cool for a few minutes.
Divide the cooled lentils evenly between 2 large airtight lunch containers.
Layer the quartered cherry tomatoes over the lentils in each container.
Top with the chopped cooked chicken breast, distributing it evenly.
Sprinkle the fresh chopped coriander over the chicken.
Spoon 2 tablespoons of tzatziki into each container, distributing it evenly across the top.
Seal the containers with their lids and refrigerate until ready to eat.
Comments
The stated 15 minutes ignores the time to cook lentils from dry—a real bowl needs at least 30 minutes simmering—so budget 40 to 45 minutes total, or use canned lentils to hit the claim. Chicken breast, cherry tomatoes, and coriander are available everywhere in Charlotte (Harris Teeter, Food Lion, Walmart, ALDI, Kroger), but tzatziki is not typically stocked in the mainstream chains and will send you to a specialty or ethnic market, adding a second stop. Two servings makes this a lunch-box or quick dinner for a couple rather than a family meal, and the dish does not reheat well once the yogurt sauce sits—plan to eat same-night. The cost per serving runs $4 to $5 once you factor in the protein and yogurt, reasonable for lunch but watch the tzatziki markup at a specialty store.
