1/2 cup finely diced onion
2 large eggs
1/4 cup gluten-free flour blend

Directions
Peel and finely shred the sweet potatoes using a box grater or food processor. Transfer the shredded potato to a clean kitchen towel and squeeze firmly to remove excess moisture; set aside in a large mixing bowl.

Heat about 1/4 inch of olive oil in a large skillet over medium-high heat until shimmering and a small piece of potato sizzles on contact.
