Ingredients

4 tbsp Extra-virgin olive oil, divided

3 cloves Garlic cloves, minced

2 tsp Fresh lime juice

½ tsp Chili powder

¼ tsp Kosher salt

⅓ c Fresh cilantro, chopped, plus more for serving

1 lb Medium shrimp, peeled and deveined

⅓ c Yellow onion, finely diced

Directions

  1. In a small bowl, combine 3 tablespoons of olive oil with the minced garlic, lime juice, chili powder, kosher salt, and chopped cilantro. Whisk until well blended. Add the peeled and deveined shrimp and toss gently until each piece is evenly coated with the marinade. Cover the bowl with plastic wrap or a lid and refrigerate for at least 10 minutes, or up to 8 hours, to allow the flavors to infuse.

  2. Place a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Once the oil is shimmering, add the diced onion and cook for 2 to 3 minutes, stirring occasionally, until the onion becomes fragrant and begins to soften.

  3. Pour the marinated shrimp along with all the marinade into the skillet with the onions. Cook the shrimp on the first side for approximately 45 seconds, until they just begin to turn pink. Using tongs or a spatula, carefully flip each shrimp to the other side.

  4. Continue cooking for about 1 minute more, until the shrimp are fully cooked through and opaque (internal temperature should reach 145°F). Remove from heat immediately to prevent overcooking.

  5. Transfer the garlic cilantro shrimp to a serving plate or bowl. Garnish generously with additional fresh cilantro if desired and serve immediately while still warm.
