Apple-Stuffed Acorn Squash

Ingredients
4 acorn squashes, washed
1 tablespoon butter
2 apples, chopped
2 teaspoons packed brown sugar
1/2 teaspoon ground cinnamon
Directions
Wash hands thoroughly with soap and water before beginning.
Slice each acorn squash in half lengthwise and use a spoon to scoop out and discard all seeds and stringy membranes from the center.
Arrange the squash halves cut-side down in a microwave-safe glass baking dish. Cover loosely with plastic wrap and microwave on high power for 5 minutes to partially cook the squash.
While the squash cooks, place the butter in a separate microwave-safe bowl and microwave on high for about 30 seconds until melted.
Stir the chopped apples, brown sugar, and cinnamon into the melted butter until well combined.
Microwave the apple mixture on high for 1 minute 30 seconds, stirring once halfway through, until the apples begin to soften slightly.
Remove the partially cooked squash from the microwave and carefully flip each half cut-side up. Divide the warm apple filling evenly among the eight squash halves, spooning it into the center cavity of each piece.
Cover the baking dish with plastic wrap and microwave on high power for 3 to 5 minutes, until both the squash flesh is very tender when pierced with a fork and the apples are completely soft.
Carefully remove the dish from the microwave and allow it to rest for 1 minute before serving warm.
